How the heck is it already May? Seriously, I feel like we just celebrated New Year’s like a week ago but summer is right around the corner. I mean, I know I’m only 25, but each passing year already seems to be going by faster and faster. It’s nuts! BUT, I hope everyone’s month is off to a good start! Anybody have plans for Cinco de Mayo? Don’t forget to have a margarita and some guac tomorrow, hehe.
I always love the beginning of a new a month. It feels like a small, fresh start every 30 days or so. May feels particularly refreshing to me since I’m making a ton of progress in coming out of my Crohn’s flare! I even started the month off by getting a new do, haha. I’m not sure what it is, but any time something significant happens in life, it always feels therapeutic to switch my hair up (I chopped it all off a week after I moved up here last year)… so I went a little blonder on Monday! (If you’re in my area, you guys have to visit my guy Hal (Hair by Hal) at Jolie Salon & Day Spa. He is the greatest! Always workin’ some magic.)
I thought I’d start May off by doing a little roundup of my favorite April looks (including a few Insta posts that didn’t make it to the blog). I also thought it could be fun to start doing roundups at the beginning of every month for you guys! Not just of the previous month’s fashion, but maybe of my favorite things from the month before, a roundup of questions you guys have for me, or a roundup of your choice! What are y’all’s thoughts on that? Anyways, I’ll kick it off this month with my favorite recipes from April. I spent a ton of time trying new recipes last month to accommodate my tricky diet. I had a ton of fun with it and found some serious deliciousness out there!
I won’t rehash every single look here, I just wanted to share my favorites and make them shopable in one place for you guys! (I linked each look up separately for you, but all items are shopable at the end of the post, too!)
Since my recent cooking adventures have been inspired by my flare and its restrictions on my diet, all of these recipes are Crohn’s friendly for those of you who need some nutritious and tasty low-fiber recipes! And don’t worry, they’re perfectly suitable for a normal diet as well! Charlie loved all of them too! 🙂 Seriously, I love all of these… I’ve made them all at least twice! This is quite possibly my new favorite recipe of all time. Charlie keeps telling me I’m going to get sick of it because of how often we’ve been making it, haha. It’s super flavorful, reasonably healthy, and super eaaaasy!
Yum yum. Yum yum yum. This one is a little bit spicy (if you know me at all, you know I looooove spicy foods!) but it’s so tasty! Again, reasonably healthy (it’s a little high in sodium (for me at least) so I cut the salt in half). We made it with low sodium Spanish style rice and grilled zucchini, squash, and red onion.
This one is another easy, healthy one with tons of flavor! I found out that this is a good one for easy leftovers, too!
I’ve just recently started getting into seafood beyond shrimp (and when I say seafood I mean salmon and scallops so I don’t really know if that counts, haha). Anyways, I decided to try making salmon at home for the first time and it was a success! In terms of salmon, I’ve seen healthier ways of cooking it (I used low-sodium soy sauce and cut the salt out altogether to eliminate some sodium), but sweet baby Cheez Its it’s delicious! Besides, there are much worse things you can eat, and like I said, I’m easing into it. 😛 I had garlic mashed potatoes and french style green beans with it but whenever my diet is back to normal I’ll be switching out for asparagus!
Okay, I cheated. I’ve been using this recipe for a while now. But if it counts, I made it a couple of times this past month! This is literally my and Charlie’s all time favorite marinade. It. Is so. Good. And it goes with so many things!
