My 5 Favorite Meal Prep Meals from October
Charlie and I love to meal prep. We both really enjoy cooking but we don’t like cooking during the week. It feels like by the time Charlie gets home from work, we cook, eat, and clean, it’s time for bed! But we also know that if we don’t have food ready to go, we’ll spend all of our money eating out… which is a no-no for new homeowners. 😛 Something that helps us with that is meal prepping on Sundays. We cook several meals to last us throughout the week so that we have good, hearty meals that only need a couple of minutes in the microwave for a weeknight meal!
Another perk to meal prepping is that we can make our favorite foods that the other person doesn’t eat. 😉 We still always sit down to eat together but Charlie might have something loaded up with mushrooms (ew) and I can have something buffalo flavored (he’s a weirdo that doesn’t like buffalo sauce) and we’re both happy. 🙂
So, here are 5 of my favorite meals that I made during October that keep really well and reheat like a charm! I also finally seem to have perfected my chili recipe but I’ll share that with you once I can take photos of it all. 😉 #bloggerprobs

This turkey stroganoff is super easy, super flavorful, and tastes great leftover! I don’t eat much red meat because of Crohn’s so I was a little worried that a turkey stroganoff may not have as much flavor as a beef stroganoff but I was super thrilled with the flavor and will definitely be making it again. Charlie even liked it even though I left out the mushrooms (again, ew)!
Light Tuna Salad

I’m not a fish person (I eat salmon and shrimp and that’s the extent of my seafood) but I do This tuna salad recipelike a good tuna salad. is perfect to whip up (seriously takes like 10 minutes) and have in the fridge for a light lunch during the week. I love this particular recipe because it tastes delicious but isn’t quite as fatty as your normal tuna salad recipe.
Spaghetti sauce is pretty much always stockpiled in our freezer. It’s so easy to unthaw while you boil some noodles when you’re in a pinch for a quick but yummy dinner. This recipe is a combination of my mom’s recipe and 3 different turkey spaghetti sauce recipes I’ve tried… so it’s basically my own recipe, haha. Again, it’s turkey instead of beef but super flavor packed. I truly don’t think you would know it was turkey if you tasted it blindly!
Buffalo Chicken Baked Ziti

This is one of my all time favorite recipes and I make it pretty frequently! If you’re like me and a huge buffalo fiend (i.e. will take buffalo sauce in any shape or form), then this buffalo chicken baked ziti will be right up your alley. You can scratch your buffalo itch and feel a little less guilty about it. It’s not necessarily “clean eating,” but it is a weight watchers recipe so you cut out a lot of not-so-good things that come covered in buffalo sauce (ya know, like fried wings). I double the buffalo sauce in this recipe though… seriously, buffalo sauce junkie right here.

This is only the third time I’ve made this recipe but I always love it! It’s insanely easy and super tasty. My tip for stretching this meal out throughout the week is to not cook your veggies all the way through since they will soften up in the sauce throughout the week. 🙂
